PROBLEM TO BE SOLVED: To sterilize various foods under heating in a short time using a versatile, small-scale equipment by dielectric heating of the foods with electromagnetic waves of specific frequency. SOLUTION: Foods are subjected to dielectric heating with electromagnetic waves having a frequency of 1-100 MHz; the objects are sterilized pref. at 120-180 deg.C. Also, the time of reaching the sterilizing temperature is set pref. at 10-90 s, the objects are kept at that temperature for 0-180 s and then immediately cooled so as to rapidly cooled to <=30 deg.C, thus further effectively suppressing food deterioration due to heating and bringing the deterioration to a minimum. The above-mentioned foods include all of the widely general foods with no limitations of their characters and compositions. The above dielectric heating can be conducted, for example, by disposing seal-packaged objects in the shell 6 of the heating section 4 of a sterilizer 1 equipped with a high-frequency oscillator 2. |
