PROBLEM TO BE SOLVED: To provide a method for producing pasta before and after cooking, sterilized by pressure and heat sterilization, especially by retort sterilization, especially a method for providing the before cooking pasta capable of readily reproducing the texture of the pasta in a1 dente state, which the just boiled pasta has, and the after cooking pasta, by a microwave oven heating or boiled water heating, and having small acidity. SOLUTION: A pasta is boiled for a time slightly shorter than the ordinary boiling time, dipped into an aqueous solution of an organic acid to prevent swelling of the pasta lines, further dipped into an aqueous solution of a polymerized phosphoric salt to neutralize the pasta and enhance hydration and elasticity of a protein included in the pasta, and further hermetically sealed and subjected to a retort sterilization. |
