PROBLEM TO BE SOLVED: To provide a process for producing a tasty oil imparted with nice- smelling roast taste and flavor unexpectable from the raw materials in a short time at a low temperature. SOLUTION: The tasty raw materials for the tasty oil are composed of one or more materials selected from vegetables, seaweed, seeds, processed cereal, fishery product, processed fishery product, livestock food, fruits and herbs. The tasty raw materials are subjected to pretreatment comprising the roasting or boiling without adding an oil and fat and 1-60 pts.wt. of the pretreated material is compounded to 100 pts.wt. of edible oil and fat. The obtained mixture is heated at 60-170 deg.C to extract the tasty component and the solid component is separated and removed to obtain the objective liquid tasty oil. |
