PROBLEM TO BE SOLVED: To produce the subject food having homogeneously swollen shapes, containing little oil and fat, and capable of excellently dispersed in the mouth by preparing a ribbed dough having a specific thickness using a gelatinized starch raw material, cutting the dough into arbitrary shapes, drying them so that they have a specific water content and subsequently they are made to swell with fluidized bed drying. SOLUTION: A starch raw material (e.g. corn, potato, wheat or a product obtained by processing such material) is gelatinized with an extruder, etc., the gelatinized starch raw material is processed into a ribbed sheet-shaped dough having a thickness of 0.5-1.2mm, the dough is cut into arbitrary shapes, the obtained chips are dried so that they have a water content of 4-10wt.%, and subsequently the chips are made to swell with fluidized bed drying. Further, the cutting of the above sheet can be done in such a manner that the angle formed by a cutting line and a rib line shown above is 30-80 degree. |
