PROBLEM TO BE SOLVED: To simply obtain the subject compound that is useful as an intermediate or precursor for perfume or medicine by allowing ketohexofuranose, ketohexopyranose or their mixture to react with acetic anhydride in the presence of a strong acid. SOLUTION: A ketohexofuranose of formula I, a ketohexopyranose of formula II, or their mixture is allowed to react with acetic anhydride in the presence of a strong acid compound such as trifluoroacetic acid, p-toluenesulfonic acid or the like to give the objective 2-ketohexose pentaacetate which is valuable as an intermediate or precursor of perfumes or medicines bearing an intramolecular ketone group of formula III (Ac is acetyl). |
