PROBLEM TO BE SOLVED: To provide a production method of a tea jam material and tea jam, which include a large amount of vegetable fibers and components remarkably effective for keeping good health, is green characteristically to green tea to look beautiful and is provided with a satisfactory flavor. SOLUTION: First tea leaves are collected (first process I), the collected tea leaves are steamed by steam (second process II), the steamed tea leaves are crumpled (third process III), the crumpled tea leaves are steeped and pressured in anaerobic atmosphere to ferment (fourth process IV), and fermented tea leaves are packed (fifth process V) to obtain the tea jam material. In addition the tea jam material obtained by crushing the fermented tea leaves (sixth process VI) is mixed with an additive as a jam (seventh process VII) and, after boiling them down (eight process VIII) while mixing, they are packed (ninth process IX) to obtain tea jam. |
