摘要 The present invention relates to a process for treatment of fresh food, especially fish, to improve its storage stability, wherein the fresh food is treated with a solution comprising at least two antioxidants having different antioxidative characteristics, i.e. different oxidation rate. The process provides a clear improvement of the storage stability of the food.
