The invention relates to a process for extracting an oil mixture, comprising the steps of: a) mixing pre-arranged amounts of extra-virgin olive oil and grain germ; b) grinding of the obtained mixture obtained according to step a) by machinery having all the parts in contact with the mixture made up of a material that chemically does not interact with the same mixture, said grinding being executed with a rotation speed that does not allow the creation of high peripheral speed maintaining the mixture temperature below about 30-35 DEG C, preferably 32 DEG C; c) kneading of the mixture ground according to step b) within a machine for kneading having such geometrical shape and rotation speed not to allow to the mixture to exceed a temperature of about 30-35 DEG C, preferably 32 DEG C, and providing all the parts realised by a material that chemically does not interact with mixture; d) mechanical extraction of the final product by a pressure action of the obtained mixture; e) decantation of the product extracted from step d) with separation of the liquid product from solid residuals; f) mixing of the liquid product obtained according to step e) with nitrogen, hypo-soluble selenium and eventually, in order to correct the proportions, with extra-virgin olive oil. The invention further relates to the product obtained by the above process. |
