N-Acetylglutamine is produced by culturing a micro-organism capable of producing N-acetylglutamine under aerobic conditions in an aqueous nutrient medium containing at least one sugar as the major source of carbon and containing greater than 0.2 moles per litre each of ammonium and chloride ions. It is preferred to use NH4Cl as the source of both ions and to employ up to about 0.5 to 0.8 moles/litre. The culture is preferably carried out at a temperature of about 24 DEG to 37 DEG C. and desirably at a pH within 5 to 9. Specified microorganisms are those of the genera Micrococcus and Brevibacterium, and specified strains are those of Micrococcus glutamicus and Brevibacterium Ammoniagenes.
