PROBLEM TO BE SOLVED: To obtain a humectant comprising galactosyl glycerol for foods and cosmetics, having high humectant effect in protecting from dryness at a low relative humidity, and, in contrast, low humectant effect in preventing stickiness at high relative humidity. SOLUTION: A solution of galactosyl glycerol with high purity, which can be used as a humectant by admixing to foods and cosmetics, can be obtained e.g. by adding Cryptococcus laurentii var. laurentii OKN-4 and baker's yeast entrap-immobilized in calcium alginate to each aqueous solution of lactose and that of glycerol, incubating the resultant mixture at pH3.0, 40 deg.C for 48h, centrifuging the obtained galactosyl glycerol-containing carbohydrate solution to recover and concentrate the supernatant, passing the obtained crude liquid through a chromatographic column packed with calcium-type strongly acidic cation-exchange resin to carry out fractionation. |
