A device is claimed for use when deboning the head of a butchered animal and recovering flesh from its cheeks. The animals head is placed upside down on a chariot (3) which can move horizontally on rails (4) back and forth (in the direction in which the head is facing). The muzzle of the animal is placed underneath a horizontal bar (6) fixed to the chariot and a mobile horizontal bar (50) placed in the animal's mouth. Hooks (7) either side of the head are placed in its cheeks. As the chariot is moved forwards the bar (50) causes the mouth to be opened and the jaw dislocated and the hooks pull the cheeks away from the skull.
