A cutting unit (1) has at least one cutting assembly (11) for trimming a flexible layer (2) used to cover at least one sheet (3) and having a perimetral portion (5) to be trimmed projecting beyond the edges of the sheet (3) itself; the assembly (11) having a motor-driven cutting disc (34), with a cutting edge (35), and an abutment member (42) for the perimetral portion (5) arranged tangential to a peripheral surface (45) and to the cutting edge (35) of the cutting disc (34) so as to exert in use, at the exact point being cut, an opposing force to that exerted on the flexible layer (2) by the cutting disc (34) itself.
