PROBLEM TO BE SOLVED: To provide a manufacturing method for fine-grained tofu with texture not to lose the shape. SOLUTION: The fine-grained tofu 66 is solidified by using a soybean milk solidifying box 10 provided with a push-up bottom plate 24 capable of being fitting inside a side plate 16 while keeping water-tightness and being pushed up leaving the side plate, a cloth is put on the fine-grained tofu 66, a die box 12 having the same size as the soybean milk solidifying box 10 where many dehydration holes are perforated is put on by matching an opening surface and a fitted body 14 is attained. It is fixed to a rotary frame 42 by a die box pressing device 58, the push-up bottom plate 24 is pushed up by a bottom plate push-up device 50 and the fine-grained tofu 66 is transferred to the die box 12. Then, the rotary frame 42 is rotated and the fitted body 14 is inverted. Since the fine-grained tofu 66 and the bottom plate 24 of the die box 12 are tightly adhered to the side plate 16 and no clearance is present, the fine-grained tofu 66 in the die box 12 is not shifted to a lower part and thus, the fine-grained tofu 66 is inverted without losing the shape at all. Thus, the fine-grained tofu with the texture not to lose the shape is efficiently manufactured. |
