<p>PROBLEM TO BE SOLVED: To obtain a very large number of bifidobacteria and to obtain a fermented milk where bifidobacteria survival property at the time of preserving infermented milk is drastically improved, by mixing and culturing the specified bifidobacteria and lactic acid bacteria in a culture medium where milk is a main component. SOLUTION: Bifidobacterium breve is mixed with lactococcus lactis sub-species lactis which does not generated diacetyl and acetoin so as to be cultured in the culture medium where milk is the main component. Bifid bacterium breve is desired to be a YIT4065 strain (FERMOP-15488). Lactococcus lactis sub-species lactis is the one which is conventionally used for producing cheese, etc., and characterized not to generate diacetyl and acetoin and a YIT2027 strain (FERMOP-16074) is desirable.</p> |
