PROBLEM TO BE SOLVED: To obtain a fermented soybeans (NATTO) processed food that is suppressed in large viscosity and smell peculiar to NATTO and easily treated and molded into an optional shape, by making the processed food contain NATTO, a whole egg and sub-materials such as a binding reinforcing material, a taste improving agent, seasoning and condiments and integrating it by means of a heat-solidificated whole egg component. SOLUTION: It is desirable to contain 37-4(wt.)% NATTO as a solid, the 30-4(wt.)% whole egg as the solid, the 60-3% sub-materials such as the binding reinforcing material, the taste improving agent, seasoning and condiments and a required quantity of water for adjusting hardness. The shape is desired to be one of a block shape, a bar shape and a planar shape. For example, the shape is the one for humburg steak in disk-shaped NATTO processed food, the peculiar viscosity and smell are suppressed but the particles 1 of NATTO are viewed on a cross section surface so that the existence of NATTO is appealed. |
