Improvements intended to allow the pitting machine to act optionally as an olive pitter/slicer, consist in establishing, substantially away from the disc 14' carrying the caps 14 acting as "sufridoras" during the olive-pitting stage, a disc 17' carrying a plurality of cradles 17 towards which the olives 31 can be moved after they have been pitted by means of the retraction of the pitting punch 13 provided, for this purpose, with small securing rods (spears) 13' for the olives so that it is in these cradles 17, i.e. completely outside the pitting zone, that fragmentation of the olives into slices occurs with the collaboration of a set of discoidal, parallel cutters 23 conveniently associated with a cutting mechanism, said cutters 23 being capable of adopting two positions, one of approximation and another of distancing vis-à-vis the cradle 17 so that the pitting machine acts also as a slicer or exclusively as a pitter. <IMAGE>
