Food and pharmaceutical compositions are disclosed which contain amounts of shor t chain monounsaturated fatty acids or their derivatives sufficient to increase the content of the fatty acids withi n the tissues when said compositions are administered and to substantially improve the metabolic processing of lipids within animals.
