Textured food product in the form of a gel is prepared by: (i) making a mixture of an alginate sol, vegetable fat and protein, selected to give a mixture with a neutral taste, smell and colour; (ii) flavouring the mixture to the desired final taste and/or colour; and (iii) dispersing calcium ions in the mixture to cause a gelling reaction. |
