A sled (1) is used on which the breast part (2) is accommodated. The breast part is rigidly and immovably fixed on the sled. The sled forms part of a conveyor, on which a large number of sleds run via a circulating track (3) in an endless sequence (4). Next to the track are positioned various tools for skinning and filleting and in particular two knives (5).
