A process and assembly cools a noodle machine extrusion-head (2) and incorporates: (i) a water tank (5); (ii) two water tubes (14) linking the water tank (5) with the noodle machine extrusion head (2); (iii) a water pump (7) in the tank (5) and serving the two tubes (14) as they deliver cooling water to the noodle machine extrusion-head (2). The novelty is that the noodle machine extrusion-head (2) has: (a) a temperature sensor (4) linked to a control switch (3) to the water pump (7); (b) a temperature sensor (8) in the water tank (5); (c) a water-exchange unit (6) linked to the tank temperature sensor (8); (d) when the temperature (8) in the water tank (5) exceeds a given threshold value, the water-exchange unit (6) effects an exchange of a given volume of water.
