PROBLEM TO BE SOLVED: To obtain a new enzyme effective in gum removing process, etc., useful in oil chemical industry, pharmaceutical industry, etc., comprising heat resistant phospholipase which has a specific optimal temperature, originated from microorganism belonging to genus Pyrococcus furiosus or genus Aeropyrum. SOLUTION: This new heat resistant phospholipase which has optimal temperature of 95-105 deg.C, originating from microorganism belonging to genus Pyrococcus furiosus or genus Aeropyrum, is effective in gum removing process, etc., widely used in oil chemical industry, pharmaceutical industry, etc., for producing lysophospholipid as a surfactant, a therapeutic agent for hypercholesterolemia. This heat resistant phospholipase is obtained by incubating a microorganism which is capable of producing heat resistant phospholipase, belonging to genus Pyrococcus [for example, Pyrococcus horikosii(JCM9974)], or the microorganism belonging to genus Aeropyrum[for example, Aeropyrum±ernix(JCM9820)], and collecting the product from the culture product. |
