PROBLEM TO BE SOLVED: To obtain the bone liquor of fishes, etc., enhanced in the synergistic effects of a glutamate salt contained in a liquor with the nucleic acid-based taste ingredient released from the fishes, etc., and excellent in the stability of the quality by immersing specific dried products in a proper volume of the liquor, sealing a container in the state and subsequently subjecting the mixture to a sterilization treatment. SOLUTION: This bone liquor is obtained by drying fishes such as Salvelinus pluvius at a low temperature under a reduced pressure of -0.04MPa or lower, immersing the dried product having a prescribed water content in e.g. a 50-100 times (based on the volume of the dried Salvelinus pulvius, etc.), diluted solution of a liquor such as a Japanese sake, sealing a container in the immersed state, and subsequently subjecting the container to a thermal sterilization treatment. |
