Disclosed is a process for manufacturing a linear glucamide surfactant comprisin g reacting an N-alkylglucamine, e.g., N-methylglucamine, a fatty ester, e.g. coconut oil in the presence of a phase tr ansfer agent, generally a nonionic surfactant, preferably a preformed product of the process, the reaction preferably being con ducted in the presence of an alkaline catalyst.
