发明名称 PRODUCTION OF ERYTHRITOL
摘要 PROBLEM TO BE SOLVED: To obtain edible erythritol at high yield and advantageously in the industry while reducing load in a refining process by cultivating a yeast producing erythritol from fermentable saccharides in a cultural medium including safe and inexpensive ammonium sulfate permitted as food additives as a principal nitrogen source. SOLUTION: The above erythritol is obtained by cultivating a yeast capable of producing erythritol from fermentable saccharides (at least one kind selected from the group of glucose, fructose and glycerol) [e.g. mutant strain MCI 13371 (FERM BP-6173) of Moniliella pollinis CBS461.67] in a cultural medium including the fermentable saccharides as a principal carbon source and ammonium sulfate as a principal nitrogen source and then collecting erythritol from the resultant culture. Erythritol is obtained in a good yield, and a minimized amount of by-product such as glycerin in a less degree of coloration of obtained erythritol.
