The method concerns cutting off and controlled cooling of individual lengths (1) of a rolled profile (2), preferably of high quality steel, emerging along the line of direction (x-x) from a finishing section of a hot rolling mill. The method is characterised by the fact that the knives (11) of the cutting off unit (10) rotate in a horizontal plane and offset the end of the length (1) from the line of direction (x-x) of the profile (2) by an amount (21). The appts. includes synchronously counter-rotating knife carriers (12a,12b) which are provided with offsetting segments (23a,23b) located behind the knives (11).
