PROBLEM TO BE SOLVED: To provide a grain full of starch for which protein, lipid and a grain odor are reduced by performing a processing by alkali liquid containing an organic solvent and reducing the protein and the lipid. SOLUTION: For instance, 1kg of 90% polished rice is immersed in the solution of 500ml of the boric acid buffer solution (pH9.0) of 0.1M containing organic solvent resistant protease active 179 units set to the temperature of 50 deg.C for 14 hours. Thereafter, processed rice is washed (1 unit of an enzyme is an enzyme amount for generating the p-nitroaniline of 1μmole in one minute at 95 deg.C) for 2 hours in flowing water and this target grain is obtained. |
