PROBLEM TO BE SOLVED: To obtain a compsn. or food which is excellent in the intensity and persistence of flavor by incorporating flavor components into a water-insoluble compsn. obtd. by adjusting the compsn. to specific pH in a system where gelatin, xanthan gum and water coexist. SOLUTION: For example, 90 parts (by weight) fibrous compsn. having a moisture content of 75% is obtd. by mixing 20 acidic gelatin and 10 parts xanthan gum with 500 parts water, heating the mixture for 10 minutes at 80 deg.C to melt, adding 4.5 parts mint oil thereto, stirring the liquid, further adjusting the pH of the liquid to 3.0 with citric acid to insolubilize the liquid, cooling the liquid to 20 deg.C, then dehydrating the liquid and repeating the washing and dehydrating until the liquid after the washing exhibits pH 4.0. The compsn. which is air dried at 60 deg.C is pulverized, by which 28 parts desired compsn. is obtd. The total amt. of the resulted compsn. is compounded with a gum base at a ratio of 5(wt.)% and chewing gum is prepd. in accordance with the stipulated method by compounding 240% powder sugar and 40% starch syrup therewith, by which the desired food is obtd. |
