PROBLEM TO BE SOLVED: To obtain the jelly which is capable of retaining the original shape of jelly even if the jelly immersed in syrup is subjected to heat sterilization together with the syrup by adding one or >=2 kinds selected from gum arabic, pullulan, γ-carrageenin, tragacanth gum and hemicellulose to the syrup of the syruped jelly. SOLUTION: The jelly is prepd. by adding, for example, by pt.wt., 20 parts sugar, 0.9 part locust bean gum, 0.5 part xanthan gum, 0.2 part gum, 1 part starch and 0.1 part trisodium citrate to 77 parts water and adding 0.2 part calcium lactate to the mixture after stirring and dissolving under heating. Next, the syrup is prepd. by adding, by weight %, 20(wt.%) sugar, 0.1% trisodium citrate and suitable ratios of water-soluble soybean hemicellulose, gum arabic, pullulan and γ-carrageenin to the water and subjecting the mixture to stirring and dissolving, then adding 0.2% calcium lactate and 0.2% citric acid. The jelly and the syrup are then mixed at 60:40, by which the desired jelly is obtd. |
