PROBLEM TO BE SOLVED: To obtain a DNA capable of providing a new mutanase, effective in preventing bacterial plaques formation and removing the bacterial plaques and formulable in a composition for an oral cavity such as a dentifrice by coding an enzyme having activities in hydrolyzing α-1,3-glucoside bonds of mutan. SOLUTION: An enzyme having a PT box sequence such as an amino acid sequence represented by the formula and activities in hydrolyzing α-1,3-glucoside bonds in mutan is coded. A transformant retaining a vector containing the DNA is preferably expressed to produce a recombinant enzyme. |
