摘要 PROBLEM TO BE SOLVED: To prepare mix powder for bread containing bran by which workability at the time of bread baking is improved, there is no adverse feel to eat peculiar for bran (such as adverse solution in a mouth and sticking feel to eat) and not only its taste and smell are canceled but bread delicious and easy to eat can be produced. SOLUTION: This mix powder for bread contains powdery worked bran and granular worked bran in the weight ratio of 1:2 to 2:1 and contains totally 3-30wt.% powdery worked bran and the granular worked bran in 100wt.% wheat flour. Besides, the powdery worked bran is passed through the sieve of 350μm mesh and remained in 90wt.% or more on the sieve of 53μm mesh. Further, the granular worked bran is passed through the sieve of 1400μm mesh and remained in 85wt.% or more on the sieve of 350μm mesh.
