PROBLEM TO BE SOLVED: To provide the manufacture of noodles which obtains softly chewable noodles without changing the taste of the noodles themselves, solves problem points of deformation in cooking and easy breaking of noodles, and does not have such defects as trouble to process the noodles and a great increase in cost. SOLUTION: Water is added to raw material powder, which is kneaded, rolled, and cut into a noodle belt which is as thick as noodles; and the noodle belt while held at specific humidity is heated at approximately 80 to 100 deg.C for conversion into α-type, cooled to make both the surfaces of the noodle belt half-dry, and cut in noodle lines with specific width. Then alcohol films are formed on the surfaces of the noodle lines. |
