PROBLEM TO BE SOLVED: To provide the method for manufacturing red meat processed food which maintains the flavor of foodstuffs by preventing meat juice and oil from flowing out at the time of roasting and to provide cold stock meat processed food which can easily be cut even when frozen. SOLUTION: Part of a subordinate material is added to minced red meat as a main material when necessary and after a protein transforming process is performed for the red meat while the materials are agitated and mixed, the red meat is cut to <=5mm; and the remaining subordinate material and a gelatinizing agent are mixed and formed, and then a heat treatment is carried out to obtain red meat process food such as a hamburger which has superior flavor and stimulates appetite. Further, this is frozen to obtain frozen red meat process food which is easily cut. |
