The invention concerns a unit comprising a horizontal base plate (3) for bearing the products (5') to be treated, consisting of a sealed flat caisson, the upper wall of which (30) is at least thermally conductive, inside which it is possible to circulate a heat transferring fluid (FC), said base plate being integral with support elements (2) for stacking several units (1) on top of one another while maintaining their base plates (3) spaced from one another by a predetermined distance. The invention is useful for the thermal treatment of food products, in particular cold meats, particularly for cooking, cooling or refrigerating them.
