<p>A process for the preparation of a texturing agent which comprises heating a mixture of starch, protein and water to at least partially gelatinise the starch and subjecting the mixture to shear and size reduction wherein the ratio of protein to starch solids is from 1:10 to 1:500 by weight and the amount of starch solids is from 1.5 to 25 % by weight based on the total weight of the mixture.</p> |
