摘要 A method for reconstituting meat comprises mixing meat, a brine solution, a milk protein and Collagen Protein, cooking the mixture and cooling, the milk protein and collagen being present in an amount of 0.1 to 5.0% by weight, base on the weight of meats. Yields in the order of 36% to 47% over the original quantity of meat have been achieved.
