PROBLEM TO BE SOLVED: To obtain cooked food, suck as stew, curry or hashed beef with rice with which the bodied taste having a maturation feel is sufficiently imparted without requiring the labor for aging for a long time and without the collapse of the flavor balance over the entire part by incorporating hydroxydimethyl furanone into this food. SOLUTION: This cooked food is obtd. by incorporating 3-hydroxy-4,5- dimethyl-2(5H)-furanone at a ratio of 10<-10> to 1.0wt.% into the food, further, incorporating flavor components belonging to ketones [exclusive of the 3- hydroxy-4,5-dimethyl-2(5H)-furanone] and/or phenols at a weight ratio of 1:10<-10> to 10<5> therein, and further, incorporating >=1 of aromas obtainable from meat, fish and shellfishes, vegetables, fruits, milk products and spices therein. |
