Cooked potatoes

A cooked potato having a yielding force of less than 60 N and containing potato cells having, on average, at least 5% of their intra-cellular volume occupied by non-starch aqueous matter. The cooked potato has a higher intra-cellular water content than normal cooked potatoes.
