摘要 PROBLEM TO BE SOLVED: To obtain a fatty acid fraction by a simple and convenient process without using an org. solvent or a large amt. of water by subjecting an oil or fat contg. a highly unsatd. fatty acid to hydrolysis by using lipase and then to selective esterification by using lipase. SOLUTION: An oil or fat contg. anω-3 highly unsatd. fatty acid is hydrolyzed by using lipase, and the resultant fatty acid mixture is selectively esterified with a linear higher alcohol by using lipase in a reaction system contg. no org. solvent. Refining to a higher purity is possible by fractionating a fatty acid fraction by repeating the selective esterification. Lipase used for hydrolysis is the one produced by microorganisms of the genus Pseudomonas or Candida, and lipase for esterification is the one produced by microorganisms of the genus Rhizopus, Rhizomucor, Humicola, or Fusarium.
