In a bakery, of the type having a closed airtight oven, the baking process has two controlled phases, in the first phase a dry cold air stream having a temperature between - 10 degrees C and -25 degrees C is passed through the oven, and in the second phase an air stream having a moisture content between 45% and 55% is passed through the oven.
