Cheese curd processing assembly has speed control for vat motion

A processing plant (1) makes curd for the production of soft and hard cheese and has two cheese curd vats (2) which are raised and lowered by hoists (4, 5) to a two-tier (I, II) transport system. The assembly further has a vat filling system (6) located in the upper level (I), a curd-cutting station (7), a curd processing station (8), a vat-cleaning system with a vat-tipping mechanism (10), and an inlet (11) to a portioning unit. The novelty is that: (a) the speed with which the transport assembly (3) moves the cheese curd vats can be varied as required by a control unit 12) esp. between the vat-filler (6) and the curd-cutting station (7), and (b) the curd processing station (8) has a number of movable sub-stations (8.1 8.2, 8.3) located along the track taken by the cheese curd vat (2).
