PROBLEM TO BE SOLVED: To obtain hydrangea tea-contg. candy which lessens the bitter taste of this tea and is tastefully enjoyable while maintaining the antiallergic function for the purpose of a pollinosis treatment, etc., by compounding a mixture obtd. by mixing BSA and dextrin with a hydrangea tea extract. SOLUTION: This candy is obtd. by emulsifying a mixture obtd. by mixing the BSA (saccharification type α-amylase produced by the bacteria belonging to the genus Bacillus) or CGTase cyclodextrin synthetic enzyme [1,4-α-D-Glucan or 4-α-D-(1,4-glucano)-transeterase)] into fats and oils and compounding the resulted emulsion with the hydrangea tea extract. |
