PROBLEM TO BE SOLVED: To reform the flavor of aroma-contg. gases consisting of voltile components recovered from food materials by bringing these aroma-contg. gases into contact with molecular sieve carbon subjected to an oxidation treatment with a strong acid. SOLUTION: The aroma-contg. gases (e.g.; gases generated when coffee beans are roasted, the gases generated when the roasted coffee beans are pulverized, the gases generated when water or coffee extract liquid is supplied to the roasted and milled coffee, the gases generated when steam is supplied to the roasted and milled coffee or gaseous mixtures composed of one or >=2 kinds thereof) consisting of the volatile components recovered from the food materials (e.g.; coffee) are brought into contact with the molecular sieve carbon (e.g.; having the pores which have a width of 0.4 to 0.8nm in pore diameter at >=70% of the total pore volume and having the total pore volume of 0.15 to 0.7ml/g) subjected to the oxidation treatment with the strong acid. |
