PROBLEM TO BE SOLVED: To obtain the subject food which is sufficiently delicious, has a high nutritive value and is kept for a long time by pickling the fish meat of senescent salmons into a specific pickling liquid, then drying the fish meat. SOLUTION: The senescent salmons subjected to water washing A, evisceration B, etc., are cut to desired sizes and are pickled into the pickling liquid prepd. by compounding a (docosahexaenoic acid + eicosapentaenoic acid) liquid extracted from the senescent salmons with a seasoning liquid and kitchen salt. The fish meat improved in the relatability and nutritive value by the pickling is subjected to draining, then to drying to a moisture content of about 50 to 70% by a drying machine, by which the processed food of the tight meat having bright colors is obtd. |
