FIELD: microbiological industry. SUBSTANCE: invention relates to preparing monosugars from starch-containing raw. Method of hydrolysis of vegetable raw involves its soaking, heating by live vapor in hydrolysis apparatus fitted with filtering devices followed by raw hydrolysis with diluted sulfuric acid and removal of obtained hydrolyzate through filtering devices. Nonconditioned cereal crop grain is used as a source of vegetable raw. Grains are soaked with water up to hydromodulus 4.0-5.0. Raw hydrolysis is carried out at 155-160 C for 15-20 min. Hydrolyzate is removed together with nonhydrolyzed residue. EFFECT: improved method of hydrolysis. 1 tble
