Process for producing maize starch

Starch production comprises: (a) soaking maize semolina in water containing added SO2, then decanting off the greater part of the resulting aqueous liquor; (b) milling the residual solid material from step (a) with water to form an aqueous suspension of relatively fine particles of starch and gluten and relatively coarse cellulosic casings; (c) separating the casings from the suspension obtained in (b) to give an aqueous suspension of particles of starch and gluten; and (d) separating the starch and the gluten, and drying the starch.
