THICKENING STABILIZER FOR ACIDIC BEVERAGES

PROBLEM TO BE SOLVED: To provide a thickening stabilizer with which acidic beverages suppressed of a viscosity change are obtainable and which is excellent in acid resistance. SOLUTION: This thickening stabilizer consists of sodium carboxymethyl cellulose having the conditions (A) to (D). (A) A degree of etherification is 0.50 to 1.50, (B) a 1% aq. soln. viscosity (η0 ) is 10 to 5000mPa.s, (C) the ratio (η1 /η0 ) of the 1% aq. soln. viscosity (η1 ) when the pH of the 1% aq. soln. is adjusted to 5.0 and (η0 ) is 1.0±0.3, (D) the structural viscosity when the aq. soln. is adjusted to pH 5.0 and viscosity 10000±500mPa.s is -10 to 150%.
