PROBLEM TO BE SOLVED: To obtain a binder capable of improving the bindability and molding effect of molded food (millet and rice cake, granorubber, etc.) made from cereals or their processed food as main raw materials by dissolving or swelling curdlan with an aq. alkaline soln. SOLUTION: The curdlan insoluble in water is dissolved or swollen with the aq. alkaline soln. The formation of a neutral gel is possible as well by neutralizing and gelatinizing the resulted aq. curdlan alkaline soln. This binder is mixed with the cereals or their processed food in a range of 0.02 to 3wt.%, more preferably 0.02 to 0.5wt.% as the curdlan. |
