PROBLEM TO BE SOLVED: To obtain an inhibitor of Maillard reaction having high safety and excellent inhibiting activities against the Maillard reaction, useful for skin- whitening, and protection and prevention of senility of skin, further useful for treatment and prevention of various complications of diabetic, arteriosclerosis and cataract caused by senility, and further to prepare cosmetics useful for skin-whitening, and protection and prevention of senility of the skin. SOLUTION: This inhibitor of Maillard reaction is the one including a water- soluble and hydrophilic organic solvent-soluble component, or a component soluble in a hydrophilic organic solvent containing water, and obtained by extracting it from a white birch, as an active ingredient. Further, the inhibitor of the Maillard reaction is also the one including a water-soluble and alcohol- soluble component, or a component soluble in an alcohol containing water, obtained by extracting it from the white birch as an active ingredient. The white birch used in the inhibitor of the Maillard reaction is at least one kind selected from B. platyphylla Sukatchev var. japonica Hara, Betula alba L., Betula lenta L. and Betula pendula Roth. The cosmetics includes the inhibitor of the Maillard reaction. |
