The process comprises a first phase for the removal of polyphenols from starting plant isolates, followed by a double hydrolysis, first with non specific endoproteases and then with specific endoproteases and exoproteases. The hydrolyzed peptones thus obtained find application in the agroalimentary and medico-pharmaceutical industries, specially in the sectors of human and animal feed and clinical nutrition.
