摘要 PROBLEM TO BE SOLVED: To enable to easily and profitably obtain a roux in a large amount by adding a prescribed amount of a starchy flour to a fat or oil and subsequently stirring and heating the mixture. SOLUTION: This method for producing a roux comprises melting 30kg or a fat (preferably butter) in a pan (or boiler) heated over an open fire at 40-50 deg.C, adding 30kg of wheat flour (when 70kg of the wheat flour is totally used in three portions) to the melted butter, stirring the mixture at approximately 120 deg.C for 30-40min at a rotation rate of 50-170rpm, adding 20kg of the wheat flour, similarly stirring the mixture at the similar temperature for 30-40min, further adding the remaining 20kg of the wheat flour, similarly stirring the mixture at the similar temperature, putting out the fire, taking out the produced roux and subsequently cooling the roux to the ordinary temperature.
